How to Keep Your Coffee Fresh: A Storage Guide

Simple storage tips to preserve peak flavor from the moment you open the bag to your last cup.

Freshness Starts at the Roastery

At On'Ze Coffee, every bag is roasted in small batches weekly. But once you open that bag, a few simple habits will keep your coffee tasting its best.

The Enemies of Fresh Coffee

  1. Air — oxidation degrades flavor compounds
  2. Light — breaks down oils and aromatics
  3. Heat — accelerates staling
  4. Moisture — causes mold and off-flavors

Best Storage Practices

Keep It Sealed

After opening, reseal the bag tightly using the built-in zip closure. Push out as much air as possible before sealing.

Use an Airtight Container

Transfer to an opaque, airtight container if you won't finish the bag within a week. Ceramic or stainless steel works great.

Store at Room Temperature

Don't refrigerate or freeze opened coffee — condensation introduces moisture. A cool, dark pantry is ideal.

Buy Whole Bean

Whole beans stay fresh 2–3 weeks after opening. Pre-ground coffee stales in days. Invest in a burr grinder for the best daily cup.

How Much to Buy?

We recommend ordering enough for 2–3 weeks of brewing. Our Subscribe & Save program delivers fresh roasts on your schedule — never too much, never running out.

Signs Your Coffee Has Stale

  • Flat aroma when you open the bag
  • Muted or bitter taste without complexity
  • Oily residue on beans (very old coffee)

When in doubt, order fresh. Life's too short for stale coffee.
