When you brew a cup of On'Ze Coffee, you're tasting the work of farmers, pickers, processors, and roasters — each playing a vital role in the journey from seed to cup.
Origin: Where It Begins
Colombia — Genova Supremo
High in the Colombian mountains, farmers hand-pick cherries at peak ripeness. The Supremo grade represents the largest, most uniform beans — prized for balance and body.
Costa Rica — Tarrazú Gold
The Tarrazú region's volcanic soil and high altitude produce coffees with bright acidity and citrus notes. Direct relationships ensure farmers receive fair compensation.
Chiapas, México — La Laja
In the southern highlands of México, smallholder farms grow shade-grown Arabica with rich chocolate and nutty profiles. Sustainable practices protect both the land and livelihoods.
Processing
After harvest, cherries are processed using washed or honey methods depending on origin. Washed processing highlights clarity and brightness; honey processing adds sweetness and body.
Roasting at On'Ze
We roast in small batches every week, profiling each origin individually. Light roasts preserve origin character; medium roasts develop sweetness and body. We never over-roast — our goal is to honor what the farmers grew.
